Ingredients

Roasted gram flour 3 cups
Roasted rice flour 1 cup
Red chilli powder 2 tsp
Asafoetida powder 1 pinch
Salt to taste
Ghee 1/2 tbsp
Oil for frying


Directions

Mix the flour with chilli powder, asafoetida powder and salt. Now add the ghee and mix well. Knead the above to a smooth dough using hot water. Press it through the ribbon mould of a seva press into hot oil and fry it till golden brown. Drain it from oil in a kitchen towel.

When I first made the pakkavada using this recipe, I roasted the gram flour a bit & the pakkavada came out reasonably well. Next time I roasted the flour thoroughly thinking it would make it better & the pakkavada became a big flop. It would have helped if you had included a tip as to how much or to what extent it should be roasted. From my experience, I realise that it would be quite ok to make it without roasting the gram flour at all or if at all you roast it, just roast it gently (whatever the reason behind the roasting is).Sorry, I'm thoroughly disappointed that such a delicious tasting recipe resulted in such a disaster - waste of time, energy and food material - just because a small tip was not included. Please make sure to include small tips about such subtle details which can make or break the whole dish.

Tips of the day
Add little milk to onions while frying will help retain a rich color and prevent them from burning.
